GRANDMA SENA'S MARINATED SARDINES
fresh sardines (not smelt), cleaned, without heads
vinegar
water
onion, sliced thin
bay leaf
olive oil
Fry fresh sardines in oil without dipping them in anything. first Layer the fried sardines with 2 parts water and one part vinegar, onion slices and bay leaf. Refrigerate overnight. |

Indeed, you have tasted one of our greatest classic tapas: boquerones en vinagre.
Sometimes in some places, you may see they look grayish instead of white. This may be due to the residual blood of the fish. It doesn't really affect to the taste, if well the look is not as appetising as if it were white. _________________
