Las tradicionales endivias con el tradicional salmón ahumado, ese pescado otrora abundante en los ríos asturianos pero que se ha vuelto cada vez más escaso.

Ingredientes

100 grs. de salmón ahumado en lonchas
6 filetes de anchoa
2 endivias
vinagre de sidra
aceite de oliva
eneldo
sal

Preparación

En un largero o plato proporcional a las cantidades, se prepara una cama de lonchas de salmón, sobre la que colocamos las endivias cortadas en cuartos, y sobre cada trozo de endivia ponemos un filete de anchoa.

En un recipiente aparte mezclamos el vinagre de sidra, el aceite, un poquito de eneldo y una pizca de sal, y a la hora de servir lo vertemos por encima de la ensalada.

The traditional endive with smoked salmon salad. Salmon is a fish that was abundant in Asturian rivers, but which is becoming more rare.

Ingredients

100 grams smoked salmon in slices
6 anchovy filets
2 [Belgian] endives
cider vinegar
olive oil
dill
salt

Preparation

In a suitably sized bowl, lay down a bed of smoked salmon slices, and put the endive - cut into quarters - on top. Place an anchovy filet on each endive section.

In another bowl, mix cider vinegar, olive oil, a little dill and a pinch of salt. When ready to serve the salad, dress the salad with it.
