ANTES DE NADA / BEFORE ANYTHING:

Antes de compartir mi propia receta (QUE NO APARECE EN NINGÚN OTRO SITIO BUSQUÉIS DONDE BUSQUÉIS) de lo que yo considero la salsa asturiana por excelencia, quiero dejar constancia de que ésta debería ir asímismo en una sección correspondiente a salsas, si bien la he dejado aquí en carnes ya que es a lo que mejor acompaña. Muchos de mis compañeros y amigos me han pedido la receta y más de uno la come a cucharadas (LOL!!)

Queda aquí pues el recado para Art & Cía Smile.

Before sharing my very own recipee (WHICH DOESN'T APPEAR IN ANY OTHER SITE NO WONDER WHERE YOU LOOK FOR IT) of what I do consider the asturian sauce by excelence, I want to leave clear that this one should go within an own sauce belonging to sauces, if well I left it here in meats since it's precisely the best companion it can make. Many of my friends and partners have asked me the recipee after trying it and more than one has eaten it by spoonfuls (LOL!!)

Thus, I leave this message for Art & Co.





INGREDIENTES (para aproximadamente 1 litro):

- 8 dientes de ajo grandes - 8 big garlic cloves
- 1/4 cebolla - onion
- 1/2 tomate grande o 1 tomate de rama - 1 tomato of branch or 1/2 big one
- 1 pimiento morrón de lata - 1 canned red pimento
- 2 c/s de perejil - parsley
- 1 c/s de orégano
- 1 c/p de cilantro en grano - coriander in grain
- 1/2 c/c de semillas de comino - cumin in grain
- 1 c/p de chile seco molido - dried crushed chile
- 2 c/s de albahaca - basile
- 1 c/c de mostaza - mustard
- 1 c/s de aceite de oliva - olive oil
- Maizena disuelta en agua - corn starch diluted in water
- Agua - water
- Vino blanco - White wine
- Vinagre de sidra - cider vinegar
- El zumo de 1 limón - the juice of 1 lemon
- Sal - salt
- Azúcar para corregir la acidez - Sugar to correct up the acidity.

El procedimiento es muy simple: Los ingredientes grandes como el tomate o la parte de cebolla; o incluso el ajo, se cortan un poco y se introducen en el vaso de la turmix o el triturador, después lo que son las hierbas y especias (recomiendo majarlos previamente) y triturarlos añadiendo los líquidos a discreción propia de manera que cada cual puede ajustar los puntos de vino, agua y vinagre a su gusto... todo ello hasta que quede triturado con tropiezos muy pequeñitos.

A continuación (y aquí viene la magia) se pone todo ello en un cazo a hervir durante unos pocos minutos, suficientes como para que se junten todos los sabores. Aquí también es donde añadiremos la maizena disuelta con el fin de dar espesor a la salsa.

Es importante que después de este rápido hervor se enfríe rápidamente para que ninguno de los tropiezos se quede demasiado pasado, ya que entonces perdería la textura deseada.

Y por fín, ya enfriado, se prueba, rectifica de sal y azúcar al gusto y se puede añadir un poquito más de aceite si se desea.

The procedure is very simple: Big ingredients such as the tomato, onion or even the garlic are cutted up a bit and introduced into the triturator vase, afterwards the herbs & spices (best crushed previously) and crush them down adding to each one's heart content the wine, vinegar and water proportions... all of it until you get a mixture with very small & fine crunchies.

Coming up ( and here comes the magic) put all of it in a cass to boil up during a few minutes, enough to mix up all the flavours. here is where also we'll add the corn starch in order to dense up the sauce.


It's important that after this fast boil -up time to cld it up fast in order to avoid the crunchies to get too made so they won't lose the desired texture.

And at last, already cold, try it up, rectify salt & sugar points and if you disire it, add a bit more of olive oil.


CONSIDERACIONES/CONSIDERATIONS:

Sé que puede parecer muy aparatoso este procedimiento, pero tiene un sentido muy práctico: Con el "pasterizado" conseguimos tres cosas:

- Aunar todos los sabores
- Reducir el periodo de maceración de varias semanas a cero días
- Densificar a voluntad la salsa

I know that it can be a tad bit tricky this procedure but it has a very practical sense: With this "pasterized" we manage to get this three things:

- Mix up all flavours
- Reduce the maceration period from the several weeks down to zero days
- Densify the sauce at will

¿Puedes describir varias maneras en que utilizas esta salsa?

Je, je, je... Muchas gracias, Art!

"Reducir el periodo de maceración de varias semanas a cero días"

Con esto quiero decir que con la fórmula tradicional; la cual no envuelve ningún periodo de cocción, se necesiitan varias semanas para que el chumi churri adquiera el sabor deseado... hay veces que incluso algunos meses. De la manera antes expuesta, no se necesitará hacer eso.

Eso sí, otra propiedad estupenda de esta salsa es que puede durar muchísimo tiempo sin necesidad de frigorífico. De hecho puede aguantar muchos meses guardado en un sitio fresco y seco.

Por último, decir que la salsa se puede utilizar tanto como tal como adobo; preferentemente en carnes, pero creo que puede quedar muy bien con pescados también , y ¿porqué no? como parte de aliño de ensaladas.

With this I want to mean that with the traditional formula; which doesn't involve any cooking period, several weeks are needed for the chumi churri to acquire the desired flavour...even a couple of months. By the way shown above, you won't need to do that.


Now this, another awesome property of this sauce is that it can endure a whole lot of time without any need of a fridge. In fact, it can endure many months kept inside a fresh and dry.

As a last, say that the sauce can be used wether as such or as a seasoning, preferent for meats, but I think it can be sensational on fishes as well, and why not? as a part of of the green salads seasonings.

Churri churri is sort of like the Asturian version of Korean kimchi! It's no wonder I didn't understand!
