After a long time without being able to come here and post soe decent content; and taking the chance summer is here, I have thought about an ideal recipe for this period (despite our summer doesn't excel), fresh, delicious and with many textures.

Ingredients (4 people):

- 400 grs of variated greens (oak-leaf lettuce, endives, rucola, corn salad, etc...)
- 100 grs of cut in stripes and iron plated zuccine
- 100 grs of crôutons
- 50 grs of a good Asturian blue cheese (Cabrales, Gamonéu, La Peral)
- 50 grs of Afuega'l pitu cheese
- 50 grs of Vidiago cheese
- 50 grs of sweet quince paste
- Extra virgin olive oil
- Balsamic vinegar

Since it's a salad the procedure can't be easier. All you have to do is to cut the cheeses, the quince and the greens in small chunks, mix well and season.

This salad has also the attractive that some of the cheeses will crumble themselves giving a very nice extra flavour to the vinagrette.I didn't ad salt as an ingredient given the fact that the cheeses already have it by themselves and an excess could ruin the desired compound of flavours.

Ah, that looks good! I like the combo of some of my favorite vegetables and cheeses.
