Post by jomaguca »

Ingredientes:
40grs de harina, una cucharada de harina son 10grs.
40grs de maizena
30 grs de azucar
2 huevos

When I was a little girl my Grandmother (Adelina Montes) used to make these for us. It was a special treat and she only made it on Holidays.

My sister and I used to eat them before they cooled...closing my eyes I can smell and taste them. My Grandmother passed away in 1964 and I haven't had them since.

My sister was able to find the receipe and e-mailed it to me...but, they will never taste the same as when we were little girls in Brooklyn, New York and our Abuela made them for us...

No hecho azúcar.

I make frixuelos only with milk, flour, eggs and a pinch of salt. I don't use sugar. I like them better this way. After making them I add a little brown sugar, honey or marmelade on top. .I like the contrast between the unsweetened frixuelo and the filling. They can also be filled with bechamel sauce and chicken or mushrooms, in the French style. When you make them, separate the yolk from the white, and beat the eggwhites till they form peaks and add this to the batter. This makes the frixuelos spongier and lighter. It used to be the custom to make frixuelos or buñuelos the Tuesday of Antroxu (mardi gras) and to give them to the kids who went from house to house (and I remember one time when I was almost left with nothing for dinner. But now they prefer money.

Greetings.

---------------------------------------------------------------------------
I make the frixuelos like my mother and grandmother, with a slight innovation by way of the electric mixer blade to dissolve the lumps:

I put the flour in a mixing bowl, 2 eggs, a pinch of salt, 1 tablespoon of sugar, 1 tablespoon of oil (to keep them from sticking to the pan and to make sure they are smooth). Then I start adding the milk until I get the thickness I want and finally I dissolve any lumps with the electric mixer blade. Lastly I add a good shot of BRANDY - very important!.
Then I start frying them, pouring a teaspoon of oil into the pan each time before I pour the batter.
While one is frying, I sprinkle the previous one with a teaspoon of sugar and as they pile up the sugar melts to syrup. I serve them alone or with apple compote.

Frisuelos con compota de manzanes

Ingredients:

For 4 persons-

1 litre of milk (not skimmed)
4 eggs (better of chicken feed with cereals)
12 soup spoons of white flavour.
salt, oil, sugar, water, butter and 4-6 apples.

In a recipent add little slices of bare apples with eight cups of water, four soup spoons of sugar, and 2 soup spoons of butter. Let it on low fire until water vaporate and apples turn like doughy, removing the mixture each 5 minutes.

In other recipent beat eggs, and add milk and beat a little more. After, add flavour slowly, removing with a wood spoon. Add the quantity of the middle of a nail of salt. On a little frying pan (that you can put your hand open in centre), put first two soup spoons of oil (and each other next, only one more). Let warm, and put middle "garfiya" (a bowl metal instrument for kitchen, I dont know it name in english, but you can put a quarte of a glass). Wait the mixture make a little solid, and control that it doesnt adhere. Then with the wood spoon and other item, try to turn around (that's no easy) and wait the other side be a little burn. At the end, put they in a plate, and add on a soup spoon of sugar.

When you finish it, you can eat that luxury of food, with the apple confiture.

For breakfast, for a little lunch at evening, after a great luchn at middle-day. But never at dinner!!! if you dont want have nightmares...
And remember if you try to do this with corn flavour. Dont drink water!!!

Good lunch!

Frisuelos con compota de manzanas

Ingredientes:

Para 4 personas

1 litro de leche (no desnatada)
4 huevos (mejor de pollo alimentado con cereales)
12 cucharadas soperas de harina blanca
sal, aceite, azúcar, agua, mantequilla y 4-6 manzanas.

Si no quieres tener pesadillas... Y recuerda, si intentas hacerlos con maicena... ¡¡¡no bebas agua!!!
