I have found that the beans and chick peas from Spain (available from La Tienda though the link on this website) make an enormous difference in how my fabadas and other dishes turn out. The chick peas (garbanzos) are richer and far creamier in flavor than the domestic ones. The beans from Asturias (the variety called de granja) are very expensive, but worth every penny. I sent some to my Mom and Dad, and they too find them much tastier than the domestic varieties. As a bonus, there are no bad chick peas or beans to cull out.
